Studies have shown matcha to have over 10 x the nutrients of standard green tea. It’s reported to contain 70 x the antioxidants of orange juice and 9 x beta carotene of spinach. It's highly energizing and calming at the same time. Chock-full of vitamins and nutrients, it's known to boost the metabolism, awaken the mind and uplift your mood. But it's not just benefits. WIth it's fresh bitter sweet intense green tea taste, matcha is as much about how it makes you feel as it is about rich, vibrant, green flavor.
Our matcha is pure ceremonial grade 'koicha' thick style tea from Nishio, Japan. The leaves are 2011 Harvest from Kyushu ground for us in Nishio. The fresh harvested tea is carefully ground to a fine talc-like powder based on centuries old practices passed down through generations of tea masters. Our providers from Japan have a 120 year history producing this tea and have been growing organically since the 1970's. This is high quality, stone-ground, organic, shade-grown matcha tea prepared in the traditional way.
Matcha is best when made strong in a small bowl with a bamboo whisk at just the right temperature. But heck, just enjoy it your way; thick and strong, thin and refreshing, as a latte, in smoothies or cocktails, straight up or with a twist. The first thing that should be said is that matcha is an incredibly special tea that is grown, produced and prepared in a different manner than other teas. Made for thousands of years, this finely ground high grade tea is used both religously, formally and casually. It's prepared in high ceremony but also enjoyed as a steamy latte. We recognize matcha's esteemed history while embracing matcha for today. With that we say whichever way you do matcha, do it your way. With some tips you can be on your way to enjoying the worlds healthiest, most potent, most beautiful, most uplifting and most unique green teas.

Warm water, short or tall
Prepare matcha with warm, not boiling hot, water. Matcha is very fresh, very fragile and very tender. A low temperature water brings out matcha's flavor with less bitterness caused by high heat. Make your matcha with 150-170F for the best experience. Matcha is prepared "Thick" using a very small shot of water or "Thin" using a tall serving of water. A thick short matcha is like a Double Espresso and a tall thin matcha is like an Americano. With a small amount of water, thick matcha creates a potent, flavorful, frothy brew. Thinned with a greater amount of water, it's a tall and lean green tea machine with unique smoothness and light sweetness. For a potent "short" shot use 3-4oz water. For a "tall" thin brew, use 8-16oz water. Try it both ways and adjust to your taste.

Scoop and sift into a bowl
A traditional serving is about a teaspoon per serving (or less). You might like it lighter or stronger, add more tea to intensify flavor or less tea to lighten it up. Use a traditional bamboo scoop or teaspoon. Eventually you will develop an eye for how much tea you like. Matcha is traditionally prepared in a bowl. Choose a bowl that has a wide flat bottom for best results. When we scoop our matcha, we run our matcha scoop through a screen to sift it before whisking. Use a dry clean fine mesh strainer or screen for smoother refined matcha. You can skip the sifting step, but it really helps. Get introduced to matcha with 1-2 teaspoons tea, then adjust to your taste.

Think good thoughts and whisk vigorously
Use a whisk to froth your matcha tea. What you are going for is a nice rich creme' on top of your bowl. Large bubbles are bad, little teensy bubbles are good. When you froth, hold your bowl with one hand and hold the whisk firmly in the other hand in a "z" or "w" zigzag pattern. Aside from scoop size and water temperature, this is where the magic takes place. You are both dissolving the tea into the water and developing a nice froth on your matcha. Only whisk this for about 30 seconds or so. No need to over whisk.
If you cannot get a bamboo whisk, you can use one of those little electronic mini milk frother whisks sold at your local grocery. If you cannot get either, use something from the kitchen to mix or make a paste from your matcha using a spoon and a little water, dissolve as best you can then mix well into more water. If you become a matcha freak as many do, you must eventually get a whisk. Nothing makes excellent matcha like bamboo whisked matcha.

Drink matcha right after preparing it
No, don't just drink it, savor it. Meditate on it. Levitate from it. Matcha will awaken the tastebuds and stimulate all the senses. Visually, it's totally beautiful. Good matcha, as ours, is richly colored and brilliant green. The foam is sublime. The aroma is intense and vegetal. The taste is everything; rich, floral, bitter, sweet, green and intense. Soon after drinking you feel great. Your mind awakens. Your chest feels lighter and energy levels are lifted. Drink matcha immediately after preparing when it is at its freshest peak. Don't let it sit around, fresh is best. And don't be shy, try sipping with light slurps for an extra trip for your tastebuds.
Some folks do not drink it straight. That's ok, do it your way. Lattes and macchiatos using steamed milk are amazing with matcha and you get much of the same benefits. Use matcha like espresso to make your favorite drinks green. Make it as normal then simply add steamed milk. For matcha over ice, make it "short", pour it on ice, add more ice and you are good to go.
